Sugar is a broad term applied to a large number of carbohydrates present in many plants and characterized by a more or less sweet taste. Sugar delivers one of the primary taste sensations, that of sweetness. Sugar is used in food and drink industries as sweetener. Sugar occur naturally in many foods that also supply other nutrients, including milk, fruits, vegetables, breads, cereals, and grains. Sugar is a basic element found in starchy food. Sugar is a sweet, water-soluble, crystalline or powdered carbohydrate, white when pure, consisting of sucrose, lactose, glucose and fructose having a characteristically sweet taste. Sugar is commercially extracted from either sugarcane or sugar beet and used in many foods, drinks, and medicines to improve their taste. Juices of sugarcane and sugar beet are rich in pure sucrose, although beet sugar is generally much less sweet than cane sugar. Sucrose, also called table sugar, is a white crystalline solid disaccharide of fructose and glucose. Humans most commonly use sucrose as their sugar of choice for altering the flavor and properties such as mouth feel, preservation, and texture of beverages and food. Sugar forms a major element in confectionery and in desserts. The primary sugar, glucose, is a product of photosynthesis and occurs in all green plants. It is found in considerable concentrations in grapes, figs, and other sweet fruits and in honey. Glucose is the principal circulating blood sugar and is an important source of fuel for the body, especially for the brain and for red blood cells, which use no other fuel. Most glucose in the body is derived from the digestion of polysaccharides and other sugars. Urine of diabetic patents usually contains 3-5% of glucose. Lactose, the carbohydrate of milk, also called milk sugar, is a disaccharide of glucose and galactose. Lactose is a white crystalline substance obtained from whey and used in infant foods, bakery products, confections, and pharmaceuticals as a diluents and excipient. Pharmaceutically lactose is used as tablet filler and as a medium for growth of microorganisms. Fructose is a simple sugar, found naturally in honey and most fruits. Fructose is often added to drinks in preference to glucose because it is about twice as sweet. Fructose also has the nutritional advantage that it is absorbed more slowly than glucose and is converted in the liver to glycogen. Consequently, it tends not to cause a rapid rise in blood glucose levels, a feature that makes fructose suitable for some diabetic diets. However, excessive intake of fructose should be avoided because very high levels of fructose intake may damage the liver. Besides its sweetening value, sugar adds tenderness to dough's, stability to mixtures such as beaten egg whites for meringue, golden-brown surfaces to baked goods and, in sufficient quantity, it also contributes to the preservation of some foods. Sucrose, raw sugar, brown sugar, invert sugar, honey, lactose, turbinado sugar are some of the examples of sugar. The uses for sugar are countless.
