Edible oil and allied products contribute in large sector of kitchen and therapeutic requirements. They have wide applications ranging food preparation to healing applications. India is one of the largest importer and consumer of edible oils in the world. It imports nearly 3 million tons of palm oil annually mainly from malaysia, followed by indonesia. Palm oil imported into india is used in various forms- consumed directly as 'palm oil' after refining, used in the manufacture of vanaspati, for blending with other vegetable oil, crude oil and kernel oil for industrial purposes, etc. Rapeseed or mustard is one of the major sources of oil and meal to india. Rajasthan and uttar pradesh stands major producer of mustard seed. The other significant states include madhya pradesh, haryana, gujarat, west bengal, assam, bihar, punjab and jammu and kashmir. After palm and soy oil it is the third largest producer of edible oil and accounts for almost 12% of the world's total edible oil production. Among vegetable oil-seeds soya bean is prominent. In india palm and soyabean oils together constitute around 68% of global oil trade volume. Sunflower has cholesterol-free properties, thus are widely used as medicated edible oil. They are prepared from sunflower seeds. In india sunflowers wildly cultivated in karnataka, tamil nadu, andhra pradesh, maharashtra and uttar pradesh. Coconut oil is standard edible oil due to their saturated fat that is easily digestible and converted into quick energy. The oil is made from fresh coconuts. The coconut plant is largely cultivated in the coastal belt like kerela, tamil nadu and andhra pradesh. Cumin oil is an essential oil, has medicated properties and used in therapeutic, in the treatment of digestive disorders and elimination of toxins. Fish oils have large medicated values.
