Condensed milk is a highly shelf-stable milk product made by evaporating much of the water from milk to create a thick, syrupy liquid, and adding sugar to it before canning the milk in a sterilized can. When well made, condensed milk can last unopened on the shelf for up to two years.Initially, condensed milk was intended to be used as a beverage; either consumed plain or thinned with water. People who did not have access to fresh milk would have used evaporated or condensed milk instead, and many companies began to supplement their condensed milk, to ensure that it would be nutritionally valuable to consumers. As pasteurization and refrigeration became more widespread, fresh milk replaced condensed milk as a beverage, but some recipes still call for the product, and it can also be useful for camping trips. Condensed milk is used in recipes for the popular brazilian candy in which condensed milk is the main ingredient, lemon meringue pie, key lime pie, caramel candies and other desserts. In parts of asia and europe, sweetened condensed milk is the preferred milk to be added to coffee or sweetened tea. Many countries in south east asia use condensed milk to flavour their coffee. A popular treat in asia is to put condensed milk on toast and eat it in a similar way as jam and toast. In new orleans, it is commonly used as a topping on top of a chocolate or similar cream flavor snowball. In scotland, it is used for a popular sweet. In some parts of the southern u.S., condensed milk is a key ingredient in lemon icebox pie, a sort of cream pie.
