Indian pickles consist of a large variety of pickled fruits and vegetables that are marinated in oil or lemon juice and different indian spices and salt. Pickled items include mango, lemon, lime, cauliflower, carrot, radish, tomato, onion, pumpkin, palm heart, lotus stem, rose petals, ginger, indian gooseberry, garlic, green or red chili peppers, kohlrabi, gunda, kerda, zimikand (purple yam), karonda, karela (bitter melon), jackfruit, mushroom, and turnip. Indian pickles come in a wide variety of flavors; thus, a mango pickle from south india may taste very different from one made in north india. In the southern states, sesame oil is preferred, while mustard oil is preferred in northern states for making pickles.

Chutney is a term for a variety of sweet and spicy condiments, usually involving a fresh, chopped primary vegetable or fruit with added seasonings. Chutney, as a genre, is often similar to the indian pickle and the salsa of latin american cuisine, or european relish. Chutney may be dry or wet; dry chutney is generally in the form of powder, grounded with coconut. In india, chutney is often made to be eaten fresh, using whichever strongly flavored ingredients are locally available at the time. It is usually devoid of preserving agents, since it is intended to be consumed immediately post preparation.

Ketchup, also known as tomato ketchup, tomato sauce, or red sauce, is a condiment. The primary ingredients in a typical modern ketchup are tomato concentrate, corn syrup (or other sugar), vinegar, salt, spice and herb extracts (including celery), spice and garlic powder. Allspice, cloves, cinnamon, onion, and other vegetables may be included. Ketchup is also used as a base for various sauces. Ketchup is often used with french fries, hamburgers, sandwiches and grilled or fried meat. Although ketchup today is invariably tomato-based, some ketchup recipes from the 19th century did not include tomato at all and were closer to what would be called a relish today.

Sauce is liquid or sometimes semi-solid food served on or used in preparing other foods. Sauces are not normally consumed by themselves; they add flavor, moisture, and visual appeal to another dish. Sauces are in need of a liquid component, but some sauces (for example, salsa or chutney) may contain more solid elements than liquid. Sauces are a primary element in cuisines all over the world. Sauces may be ready made sauces, usually bought, such as soy sauce, or freshly prepared by the cook; such as béchamel sauce, which is generally made just before serving. Sauces for salads are called salad dressing. Sauces made by deglazing a pan are called pan sauces.
