Chutney is an expression applied to a host of spicy savours and condiments in indian art of cookery. The term itself is an anglicized form of the hindi word chatni. In india, there is a connoted indirect understanding that these preparations are also freshly made from refreshing ingredients.

Chutney, as a genre, is often similar to the indian pickle. For instance, chutneys using nutmeg are prepared only when nutmeg is in season. Chutney may be dry or wet; dry chutney is generally in the form of powder. In india, chutney is often made to be eaten fresh, using whichever strongly-flavored ingredients are locally available at the time. Chutneys can be prepared from an extensive array of ingredients and hence representing umpteen types of flavours and textures. On the whole, chutneys can be classified into two distinct categories: freshly-made preparations for right away consumption and cooked preparations intended to preserve as long as a year, which can be clubbed further according to their saltiness, sweetness, tartness, or spiciness. Many chutney recipes combine several elements of these basic flavors. Textures in chutneys range from roughly chopped preserves to smooth sauces.

Many authentic chutneys contain significant amounts of fresh green chili peppers; the other main ingredient can be any of a wide variety of fruits and vegetables. Most vegetable chutneys are prepared cold in a blender, while many fruit chutneys require cooking. Popular chutneys include: coriander chutney, mint chutney, tamarind chutney, coconut chutney, onion chutney, tomato chutney, mango chutney, lime chutney, garlic chutney, green tomato chutney, peach chutney, chilli chutney, peanut chutney, etc.

Chutney is usually eaten fresh in its native india, but as chutney has been westernized, like many things, it is mass-produced and can be bought in nearly any supermarket in the western world. In the united states and britain, offering chutney as a condiment is becoming nearly as popular as jam, relish and even ketchup. Chutney can be served at a formal dinner as a condiment for a fancy meal, or at a casual picnic with tortilla chips or crackers. Whatever the occasion, chutney is a tasty, sweet and sour treat that is sure to please.
