Pickles and chutneys in india range from spicy to sweet and soft to crispy. They're the perfect partner for a well-made meal and a 'perk-upper' for a not so perfect one! indian pickles are made from all sorts of fresh fruits and vegetables but mango, lime and chilly are especially popular. Summer is pickle-making season since the sun is hot and bright. In one of the many methods of making pickles, vegetables are soaked in limejuice, salt and spices in covered stoneware jars that are left out in the sun for several weeks. Later, cooking oil (which one depends on the vegetable or fruit being used) is poured over the pickled vegetables to preserve them. The result is delicious and makes the perfect complement to any indian meal.Pickled items include mango, lemon, lime, cauliflower, carrot, radish, tomato, onion, pumpkin, palm heart, lotus stem, rose petals, ginger, indian gooseberry, garlic, green or red chili peppers, kohlrabi, gunda, kerda, zimikand (purple yam), karonda, karela (bitter melon), jackfruit, mushroom, and turnip. Indian pickles come in a wide variety of flavors; thus, a mango pickle from south india may taste very different from one made in north india. In the southern states, sesame oil is preferred, while mustard oil is preferred in northern states for making pickles. Availing modern technology and in a manner of perfectly blending it with our traditional culture, food companies have come up with bottled pickles which sell like hot cakes! these are available in all shapes and sizes and can be chosen and picked to suit one's tastes and budget!
