Milk a food item which is very rich and also counted in the fats category is very much nutritious and healthy. Cow milk is very nutritious for small children and buffalo milk is very nutritious for grown ups. Types of milk include condensed milk, malted milk, evaporated milk, filled milk etc which are used in the preparation of food items like sweets, cheese, butter etc. Evaporated milk is also called as dehydrated milk which is canned and around 60% of the water which is mixed with the milk is removed from fresh milk. Evaporated milk is very much different than that of condensed milk. Evaporated milk can also be termed as sterilized milk with light cream color. It is vastly used where fresh milk is not readily available. The standardization of the fat contents and the dry contents adds to the process of manufacturing of evaporated milk which is followed by the heat treatment which destroys the microbes which are present in the milk and also to avoid the coagulation of the milk in the sterilization process. The heat treatment of the milk then thus evaporates and then the milk is concentrated and the milk is homogenized before it is kept for cooling. This product is very famous and popular in tropical countries. Evaporated milk is highly used in tea or coffee whitener. It is also used a substitute for breast milk, The following are the key factors for the process for the manufacturing of evaporated milk. The first and fore most is standardization where all the fat contents and the fry solid contents, then the next level are evaporation where the temperature is set. The other levels are homogenization where the milk is made to pass by under high pressure thus to decrease the number of the fat globules which are available in the milk. The other ones can be termed as general levels as it includes cooling, inspecting, packaging, sterilization and storage.
